INGREDIENTS

  • 1 lb baby potatoes (or any small, waxy variety) chopped into cubes
  • 4 tbsp unsalted butter
  • 1 tsp salt
  • 4 large shallots
  • 4–5 cloves of garlic, unpeeled
  • 6–8 fresh sage leaves
  • Additional salt to taste


INSTRUCTIONS

Step 1: Prepare the Potatoes

  1. In a large pan, add the chopped potatoes, butter and salt. Place the pan on the grill over medium heat. Stir occasionally to prevent sticking, ensuring the butter coats the potatoes evenly.

Step 2: Smoke the Shallots

  1. While the potatoes cook, place the halved shallots on the grill to smoke. Turn occasionally to achieve a light smoky flavor.

Step 3: Caramelize the Garlic

  1. Nestle the halved garlic bulb directly into the grill’s embers. Allow them to caramelise. Remove once the cloves are soft and slightly charred.

Step 4: Smash the Garlic

  1. Once cooled, remove the garlic from its skin and smash it into a smooth paste.

Step 5: Prepare the Shallots and Sage

  1. Peel the smoked shallots and slice them thinly.
  2. Finely slice the sage leaves into thin ribbons.

Step 6: Bring It All Together

  1. Add the sliced shallots, smashed garlic and sage ribbons to the pan with the potatoes. Stir gently to incorporate all the flavors and continue cooking for a few more minutes until everything is fragrant and well combined.

Step 7: Serve

  1. Transfer the butter-braised potatoes to a serving dish, ensuring they are coated in the rich, buttery sauce. Garnish with additional salt if desired.
